Chinese Fried rice

Indo chinese is my fav but i never made it at home and really missed ordering it during lockdown.
I feel i have more or less perfected the inchin fried rice with minimum effort but max flavour. Also tofu which reminds s of hong kong tofu!

Recipe for chinese fried rice:
1) boil rice with cinnamon stick and star anise - it gives a good flavour to the rice.
2) in a pan heat oil. Fry small pieces of diced chicken (optional most of the time we don't do it- family is half vegan but yooki loves chicken), then remove chicken set aside.
3) in the same oil - add lots of garlic finely chopped. Once little done add grated ginger let it cook a bit. Then add onions, carrots, capsicum cut in small square pieces. I also put in 2-3 green chillies whole.
3) once little done, round up veggies on one half of the pan. On the other side, add egg and scramble and remove it when done.
4) now let veggies semi cook (they should not be overcooked, Chinese veggies are made in wok, cooked outside but not on the inside)
5) add cooled rice (Chinese fried rice is better with old rice, sometimes I put rice in freezer to cool it)
6) now add your egg/chicken to it.
7) add 2 teaspoon of sesame oil (very imp for flavouring)
😎 add 2 teaspoon soya (my soya is dark soya hence the color)
9) add salt to taste (soya sauce is already a little salty)

Mix all well. Its ready (i havent used green onions but would prefer that if i have it in the fridge)

I will add tofu recipe to this post soon!

Meta cognition

Metacognition, thinking about how you think, has been shown to help students improve their grades. Stanford University researchers published a new study that outlines a 15-minute thinking hack that led to an average improvement of one third of a letter grade for the participants.

"Blind effort alone, without directing that effort in an effective manner, doesn't always get you to where you want to go," said Chen.

The research stems from the insight that while many resources are provided by educational institutions, students don't always know how to use them effectively. Patricia Chen, a postdoctoral research fellow who led the study, hypothesized that if students were made more self-reflective about how they approach their studies and the available resources, they could do better.

"Actively self-reflecting on the approaches that you are taking fosters a strategic stance that is really important in life," she said. "Strategic thinking distinguishes between people of comparable ability and effort. This can make the difference between people who achieve and people who have the potential to achieve, but don't."

yooki's 4th

Happy 4th Birthday to the pearl in my oyster, my yookster monster, my tinkerbell, my golu face, my sweetie ..

From age 3 to 4! You have now grown older to enjoy life in its more details. And it is so much joy to see you find newer treasures in this world everyday.

This year, you have shown so much love and compassion for animals (I esp love when you enquire "where is her mummy" whenever you see a solitary cat or dog or a bird) and I find the comfort you share with them so captivating. I admire your boundless imagination and your love for books and puppet shows and drama - i have done more theatre with you than in my entire life -suspenseful chor-police hide and seek games, or fixing the dilemma of the zebra who wants to fly or those countless mock aeroplane journeys to so many wonderlands where fairies and witches flew past us as we soared over deep monster and dinosaur valleys together.

I love how you run, jump and hop endlessly barefoot on grass (like a rabbit) or how suddenly the same day you get totally self-absorbed in your art when you are drawing or playing with your clay.

Last few months you have developed great passion for music and music videos and you dance to them matching steps with no other than Taylor Swift or Justin Timberlake! And you have developed a sense of self - you look at yourself in the mirror, try to do your lovely twirl and laugh back at yourself. And you choose your own clothes to wear!

I love how you consume everything that come your way and yet you like concentrating your interests, and that you work hard to do things the right way, even at this age. Above all, I relish how you are curious about others, their stories, their happiness and you wonder about small things of nature, insects, birds, pollens, honeybees, spiders, flowers, leaves ...

Four is a good age Yooki. Its an age when we are fully awake, honest, frank and fearless.

As a mother only thing I can add is stay your loveable, compassionate, curious self. Faith, love, patience, respect and hardwork are the few essential things that can help you achieve anything in life. As you grow older, be a bold explorer. Discover new things in your outside world and your inside world both. Carry this 4 year old with you even when you are 40 (most importantly never stop twirling in front of the mirror even when you are 200!).

Always remember: your mother loves you very much and believes in you completely.

Afterall it was you who had drawn this wonderful scribbly drawing last month  - where a small candle in your heart became the sunshine of the whole valley. For me Yuvishka, you are that delicate flame of my inner heart and the bright sun over my valley- you are both.

 I love yoo.
